salmon & veggies(cooking project – day 13)


After all of these new vegetarian meals we’ve been having lately my husband was really craving (or begging for) a simple fish dinner like we used to make.  I always keep some different varieties of fish in the freezer so I pulled out a pack of salmon and let it thaw for about an hour.

Tip: Trader Joe’s has really good flash-frozen fish. We’ve loved their tuna, salmon, swordfish, cod, tilapia, halibut, etc.

Lemon juice and lemon pepper are always my go-to seasonings when it comes to salmon and I also sprinkled on a little paprika.  I broiled the fish in the toaster oven for about 10-15 minutes or until it easily flaked with a fork.  Meanwhile I cooked some canned green beans and corn and served that on the side. An easy, simple, delicious 15-20 minute meal.

Tip: If you want your canned veggies to be less salty, drain the liquid in the can, rinse and replace with water.
