Greek lentil stew (cooking project – day 19)

I know! I’m such a slacker! Hush!

We’ve been busy with holidays, house repairs, birthdays, trips, etc. and haven’t really been cooking at home very much.  However, last week I did get to try out a recipe for Greek lentil stew from 1001 Low-Fat Vegetarian Recipes.  After eating so many rich foods over Thanksgiving and going out to eat with friends, a simple meal made of fresh vegetables was very much appreciated. 

The recipe calls for onion, green pepper, garlic, potatoes, lentils, tomatoes, zucchini, green beans, and vegetable broth. The seasoning includes oregano, mint, turmeric, coriander and salt and pepper.  The steps were easy enough, and if only using one pot, how difficult could it be? 

I’ve never cooked lentils before but faintly remembered liking them. I’m glad I remembered right because there are a lot of them in this stew and they are good! So within an hour we got a delicious meal that was very filling and packed full of dietary fiber (which I think is necessary after Thanksgiving…and all those leftovers).
