“hobo pack” on the grill

Spring is here, folks! That means it’s grill time – the best time of all!  For our first grill-meal of 2012, we cooked some salmon with some veggies in a “hobo pack”. A hobo pack is a foil pouch containing meat, veggies or whatever it is you want to cook on a grill or fire.  It’s a pretty easy way of cooking a meal on the grill while also maintaining moisture.

My husband is the grill-master in this house so this meal was all him.  The cooking method he used this time was very simple:

Ingredients
Salmon fillet(s) with skin
2-3 cloves garlic, minced
Lemon juice
Red pepper, sliced
Grape tomatoes
Red onion, cut into wedges

Method
1. Sprinkle fish with garlic and lemon juice and cover with veggies. Wrap everything in an aluminum foil pouch.
2. Cook on “grill heat” for about 15 minutes until fish flakes easily with a fork.

We served the salmon over some white rice. Tastes like springtime!
