an amazing salad – arugula with mango and avocado

My girlfriend and her lovely daughter came over to visit a couple weeks ago.  Being an avid Pinterest user herself, she wanted to try out a recipe she found for a chocolate cake that’s half the calories (no joke!).  I also had a Pinterest recipe I wanted to try for a yummy looking salad with arugula, mango, avocado, macadamia nuts and homemade dressing, so we made a day of it.

Ingredients
1 mango, cubed
1 avocado, cubed
¾ cup macadamia nuts
5 cups fresh arugula

Ingredients for dressing
1/4 cup lemon juice
2 Tbsp apple cider vinegar
1/4 cup olive oil
1 Tbsp Dijon mustard
1 tsp agave syrup
pepper
dash garlic powder

This salad is ridiculously easy to make and it’s soooooooo good – and beautiful! Seriously, my picture doesn’t do it any justice.  It’s only been a couple of weeks and I’ve made this same salad three times. The dressing is sweet and tangy and would also go great on a spinach salad.  Be warned, it does make a lot so you should keep the mango/avocado/macadamia mixture separate from the arugula until you’re ready to eat so it doesn’t get soggy.
